Seeking new expressions in winemaking, Nico Lazaridi embraced the celebrated Greek grape variety Xinomavro, thereby enriching its portfolio. For this purpose, the winery carefully selects grapes from two historic Protected Designation of Origin (PDO) regions. The first is the P.D.O. Amynteo, established in 1972 — the northernmost P.D.O. zone in Greece and the only one authorized to produce PDO rosé wines.
In the

P.D.O. Amynteo zone, the production of Dry, Semi-Dry, Red, Sparkling Dry Rosé, and Semi-Sweet wines is permitted. The main and only grape variety allowed within the P.D.O. Amynteo area is Xinomavro.

The Amynteo plateau features deep, warm soils of lacustrine alluvial origin, with light to medium texture and high sand content over a limestone substrate. This composition significantly reduces the impact of phylloxera. The nearby lakes contribute to a mild and relatively humid climate.
