Evil Eye – a powerful talisman of protection, can serve now as a lucky charm for beauty and taste!
Nico Lazaridi’s goal was to create a rosé wine from a Greek Variety, which would be associated with Northern Greece. Evil Eye is a premium rosé wine from 100% Xinomavro that can be enjoyed with a meal or on its own, as an aperitif.
During the vinification, we wanted to highlight the fresh aromas of the variety and combine the high acidity with the oiliness created thanks to battonage with the lees for 5 months.

Varieties: 100% Xinomavro
Vinification Method: Rosé vinification begins with the early harvest of Xinomavro. Direct pressing of the grapes to minimize the color extraction to achieve the desired pale pink. Fermentation takes place at controlled low temperatures to maximize the floral and fruity notes. It matures in stainless steel tanks for 5 months with lees.

Tasting Notes: Pale solmon colour. Complex aromas of mandarin, melon, tomato leaves combined with botanical notes and flowers. Full mouth with pleasant acidity typical of Xinomavro, long refreshing aftertaste
Aging: Will respond to aging for up to 4-5 years after harvest.
Perfect Pairing: Served chilled at 8-10 C. Ideally, it accompanies Mediterranean dishes, appetizers, green salads and seasonal fresh fruits. You can also enjoy as an aperitif.
